Sweet, sour, savoury, spicy and salty … I fancy some Thai tonight

I love Thai food.

Apart from the use of coriander (yuck, yuck, yuck), I love the way the Thais cook. It”s both simple and complex at the same time and I love how every single flavour packs a punch but combines to create flavours that linger on your tastebuds for hours and hours.

Seared beef on a bed of chilled noodle salad

We re-created this Thai-styled cold noodle dish in the heat of a blazing summer some years ago and it’s a dish we make over and over and over again because it works, and it works with any meat or fish, hot or cold, so it makes for a great side salad at barbecues.

Here’s our take on a Thai salad: chilled noodle salad with seared beef (with a cucumber salad garnish)
