Winter Pork Chops with Apple
4 Pork Chops
2 cooking Apples
1 small red onion
8 cloves
1 tsp A.O.C pimento Pepper
25 gs ginger, pounded
Lea&Perrins Worcestershire Sauce
Salt& Pepper
This is a really simple recipe, relying on the dry ingredients to be a rub, and mixing with the meat juices and the apples as it cooks.
Preheat your oven to 180 Celsius
Peel and pound the ginger into a paste
If your chops are on the bone, wash them to ensure there are no bone fragments. Pat dry with kitchen paper towel & sprinkle liberally with the A.O.C and Worcestershire sauce.Poke in a couple of cloves into the fat of the chops and set set aside.
Cut your apple in half laterally, so you get a star shape in the centre. Score the apple halves, and rub the ginger into the top.
Chop the onions
Place the oinions into a baking tray or casserole dish, lay the meat and apples on top, sprinkle with a generous helping of salt and pepper, and bake for 40-50 minutes under foil or with lid, then remove the lid and cook for a further 10-15 minutes to caramelise the apples.
Serve with a baked potato and some fresh green vegetables.
